I'm about halfway through his post-apocalyptic novel, World Made By Hand. It takes place in the near future, after the world has run out of energy, has had major cities nuked, and has been hit with population-decimating disease epidemics. It's a gripping read so far!

I make sauerkraut. I use nothing but cabbage and salt. Nature does the rest. Using vinegar to pickle foods doesn't produce bacteria that are good for you. Lacto fermentation is where it's at!

I asked Kyle Glanville, US Barista Champion about what makes good espresso. He said tamping is not important. Anything between 20 and 80 pounds is fine.
Using great coffee, properly roasted and freshly (like just a few seconds ago) is essential, of course.
What surprised me is that he said precise water temperature is *extremely* important. I have a Rancilio Sylvia espresso machine. It has a lot of good things going for it, but the stock bimetallic thermostat provides lousy temperature control. It can swing as much as 40 degrees. You can narrow that range a lot by temperature surfing (google it). Better yet, get a PID temperature control kit and install it on your machine. I did and it changed everything.

I agree with you. The unfortunate fact is that, like disease, these drugs will always be in our society. We can only do things to reduce their harm to society. The current method, criminalization, has a lot of horrible side effects that have been covered nicely in the comments above. It's time to try something else, like treating drug addiction as a social/medical problem instead of a crime.

That's odd. My grandmother kept chickens and they never smelled. Recently, I've been visiting people who have henhouses and the smell has never been bad. In fact, I kind of like the smell.

I've talked my way out of several traffic violations and jaywalking. The police officers in these situations were very kind.
To balance that, I was once issued a ticket for something I didn't do. The cop knew it, and lied in court. The judge found me guilty. I was young and naive, and quite surprised. Thank goodness it wasn't for something that I could have been jailed for.

And you need to know what to hoard. My grandmother was a hoarder. Orphaned in Russia during the revolution, she learned the value of saving stuff that could be put to good use. Her bottles, bolts of fabric, jars of seeds, nails, rubber bands, and other salvaged and scavenged supplies were stored neatly in the basement next to her bags of dried mushrooms, canned garden preserves, and shelves of dandelion wine.

I think of Teresa's moderation style as strong, very effective medicine that keeps these discussions from becoming as crazy as YouTube's. Yes, there are side-effects but the overall result is overwhelmingly positive. I'm not about to switch medications or experiment with the dosage. Teresa works wonders.

I welcome disagreement on the topics I post. The discussions are interesting, and I learn a lot. If I were hosting a dinner party and we had a discussion that included differing opinions, I would enjoy it.
But I have a low tolerance for people who say, in effect "I'm not interested in this topic, and I don't like it when you write about it." If I were hosting a dinner party and someone pointed at my collection of ukuleles and said, "You should stop collecting ukuleles because I don't care for them," I would not invite that person back.
Are you clear on the difference?

I like to show her photos on my iBook, because the images are big and bright.
She told me stories about growing up with her brothers and sisters in Russia. Her parents were killed in the revolution. They lived on wild mushrooms and potato peels (the rich folks ate the potatoes)
