Hillsboro, OR has several. Some semi-permanent, others making stops at constructions sites.

One of the better Mexican restaurants downtown supposedly has a taco wagon embedded in its structure.

Dammit now I am hungry and the nearest truck is a 3 mile trip. So much for getting any thing done this afternoon.....#5: two tacos and a fajita stuffed burrito!!! and a mexican coke!
