Going Home is my favorite instrumental by a rock band, ever.

I'd also add "He's A Pirate" from Pirates of the Caribbean. Perhaps not quite in the same vein, as it's orchestral-- however, it's one of the few orchestral songs that regularly makes into my rock playlists.

The main theme from Cinema Paradiso is absolutely qualified for the list. The melody alone can bring back the lump in the throat you got from the first time you watched it.
