Cory...how does one eat low-carb vegan? I'm asking because I don't think a person can live on tree-nuts and Napa cabbage indefinitely, and because I'd like to get low-carb again (I've pudged out recently), but can't eat so much Gouda anymore. I'm ovolacto, but cutting down the cheese would be good for me.
That same idea also showed up in an episode of Tony Carrillo's F Minus strip last year, which is distributed online and in newspapers by United Feature Syndicate.
Does this mean you gather the vegetables that you eat at nighttime? Or do you insist on reaping your food only when the sun is at it's zenith? I don't get it.
seriously, i must have that shirt. i work at seattle children's theatre and we're doing a production of "night of the living dead" in october, and i'm a vegan--perfect! when, where, how can i get one?
Re: low-carb veganism, lots of beans (soy and others) and other veg are high in protein and low in carb. And the starch in beans tends to be the non-digestible type, so you get a lot of fiber without the carb load. Plus lots of dark green leafies, as well. I remember reading somewhere that spinach has more usable protein per ounce than steak.
Sticking to whole grain when you do eat grains helps, since a lot of high-carb diets tend to get that way thanks to heaping helpings of refined wheat and corn. And you can de-carb this even further by eating gluten products like seitan, which are wheat proteins without the carbs.
Basically, you're just avoiding white flour stuff, white rice, white potatoes...well, almost anything white (except cauliflower, which is low carb), "sugary" veg like beets and carrots and processed, de-germed/de-branned grains.
Just for the record, I'm a vegetarian, not a vegan (I gots too much love for the cheese, baby). But it's basic nutritional science that works across the board.
